Vermentino, known as Rolle in Provence, is the Mediterranean grape par excellence, originally from Italy and long since adopted along the coast of Provence and on the islands. Les Jamelles added it to its Les Découvertes range as an IGP Pays d'Oc, convinced that this expressive grape finds in Languedoc-Roussillon the right conditions for its aromatic development. The dry, free-draining soils amplify its natural minerality. The colour is a bright green-tinged yellow, young and crystal clear. The nose reveals a fresh, aromatic palette: lime, aromatic herbs, white flowers and a characteristic touch of iodine. On the palate the attack is clean, the texture lively and saline, with a light bitterness on the finish reminiscent of fresh almond. Ideal with seafood, grilled fish, sea bream carpaccio or fresh ewe's milk cheeses. Serve well chilled, at 8-10 °C.
