Production specifics

Vineyard work relies on meticulous attention and constant care. While the estate doesn't claim any official certification, its practices are inspired by organic and biodynamic agriculture. Controlled cover cropping, limited tilling, respect for living soils, and the absence of non-essential synthetic products all contribute to a sustainable, balanced, and environmentally friendly approach to viticulture. Short pruning allows for controlled yields and optimal grape ripeness. Each plot is worked individually, with a non-systematic approach tailored to each vintage.

The harvest is exclusively manual, allowing for rigorous sorting of the grapes directly in the vineyard. Vinification is tailored to each plot and the specific conditions of the year. For the reds, a variable proportion of whole clusters (up to 60%) is incorporated, depending on the ripeness of the stems, to preserve freshness and complexity. For the whites, pressing is gentle and prolonged, fermentation takes place in oak barrels, followed by aging for 10 to 18 months. Lees stirring is moderate to maintain tension and vibrancy. Bottling is carried out at the estate, ensuring complete control over each stage.
