In 1997, Manu Bautista took over from his father-in-law, Jacques Tupinier. At that time, the estate comprised 8 hectares. Thanks to an ambitious and modern vision, Manu has progressively expanded the vineyard to 12 hectares, always exclusively within the Mercurey appellation. For the past few years, he has been supported by his nephews, Anthony and Romain, who bring a youthful and passionate energy to the business. Together, they manage a close-knit and demanding family operation, committed to sustainable viticulture.

Production specifics

The estate practices sustainable viticulture, respecting the natural rhythm of the vine. The harvest is entirely done by hand, in small crates, to preserve the integrity of the grapes. Sorting is a double process: first on the vine, then on a mobile sorting table set up directly in the vineyard. This meticulous care ensures that only the finest bunches are retained, guaranteeing expressive and precise wines.

The winery, built in 2016 and covering over 500 square meters, is equipped with modern technologies that allow for precise and tailored vinification of each plot. Each wine benefits from rigorous monitoring to optimize aromatic extraction, structure, and balance. Aging takes place in a 17th - century cellar carved into the rock. This cellar offers ideal conditions, with a naturally constant temperature conducive to slow and harmonious aging in oak barrels. The estate adjusts the percentage of new oak according to the vintage and the cuvée, always seeking a subtle balance between structure and fruitiness.
