The estate farms its vines on a mosaic of soils where sand, clay and limestone sit side by side. This trio has a direct influence on style: sand encourages airy profiles and a sense of lift on the finish, clay brings grip and volume, and limestone contributes length as well as aromas often leaning towards citrus and pure fruit.

Most of the plots face south / south-west, on gentle slopes that make manual work easier. The area also has a transitional climate between oceanic and continental, marked by regular winds (which help keep the grapes healthy) and fairly steady rainfall, handled particularly well by the open, airy structure of the soils. Today the estate is run by Catherine and Thierry Robion, together with their son Éloi. The brand name "ELEMART" is in fact built from the first syllables of their three sons' first names, a sign of a project that is explicitly about family and passing things on.

Three values shape their approach: receiving, enriching and passing on. This translates into attentive viticulture, constant care over grape ripeness, then winemaking that aims for clarity of expression rather than showiness. The estate highlights work based on observation, adjustment and consistency, in order to offer champagnes with an assertive style and no needless artifice.

Production specifics

The estate describes a highly structured approach to production, based on keeping origins separate and respecting the juice. In the vineyard, it relies on noble pruning methods (notably "cordon de Royat" and "Chablis"), chosen to improve air flow around the bunches, spread out the growth of the foliage and keep better control of yields. The work combines mechanical and manual tasks, including ploughing and hand weeding at the end of winter, followed by natural grass cover left to grow after flowering, to help the vine keep its balance. Vineyard protection is described as relying on preparations such as herbal teas, plant extracts and essential oils, in keeping with organic farming.

Harvesting is done by hand, with particular care given to tasting the berries and to sorting: only healthy grapes are picked and then pressed. The estate has two presses (2,000 kg and 4,000 kg), allowing it to harvest and press plot by plot and keep the different origins apart. It specifies that only the cuvée juice is kept. Settling is described as static, by natural gravity, for at least 24 hours in temperature-controlled tanks.

For winemaking, the cellar has 22 temperature-controlled stainless steel tanks of various sizes, suited to a plot-by-plot approach. Some of the wines may be aged in 228-litre barrels (sourced from Burgundy), to add structure and depth without masking the wine's profile. The yeasts used are described as indigenous, then selected, and alcoholic fermentation is carried out at low temperature to preserve aromatic finesse. The wines then rest on their lees in tank for a minimum of 6 to 8 months, which adds to their complexity and palate structure.

Signature cuvées

VB03 is the flagship blend: it combines 70% Meunier, 20% Chardonnay and 10% Pinot Noir, from clay-limestone and sandy soils. It is a cuvée designed to bring together fruit, structure and freshness, and it is very versatile at the table.

Les Monets is a vintage cuvée of Meunier from a single plot, on the Middle Lutetian limestone of Lhéry. The intention is clear: to showcase a precise origin and the personality of Meunier on this type of soil.

60/40 is a vintage cuvée blending 60% Chardonnay and 40% Meunier, from soils made up of clay, sand and limestone. It reflects a search for balance between brightness and breadth, with a palate tightened by the Chardonnay and broadened by the Meunier.
