Founded in Rully, Maison Louis Picamelot produces sparkling wines using the traditional method (formerly known as the "Champagne" method), exclusively Crémant de Bourgogne. Since 2007, the estate has expanded to include over 10 hectares of vineyards in the Côte Chalonnaise and Côte de Beaune, and now owns half of the grapes required. With 50% of the fruit sourced from renowned partner estates, its production combines geological nuances: clay-limestone soils, marl, and a moderate slope, promoting freshness, balance, and regional typicity. In 2008, the single-vineyard cuvée "Terroir de Chazot," produced from a single vineyard, exemplifies this commitment to expressing a precise and distinctive geographical location.

Iconic grape varieties

Primarily Chardonnay and Pinot Noir, in the traditional spirit of Crémant de Bourgogne, sometimes integrated with other white grape varieties (Aligoté or Pinot Blanc) depending on the blends, for a controlled aromatic tension and a balanced finesse.

Philosophy and History

The Louis Picamelot House took root in 1926 when Louis Picamelot established the first sparkling wine production in Rully. His two daughters introduced Jean-Baptiste Chautard in 1949, followed by Louis Siraudin in 1953. In 1981, Philippe Chautard, Jean-Baptiste's son, joined the House and took over its management in 1987. In 2000, he transformed a former 4,000 m² quarry into a troglodytic winery, taking advantage of the natural thermal stability of the stone and a green roof. Today, the House combines family expertise with diverse terroirs to reveal the elegance of Crémant de Bourgogne.

Production specifics

The winemaking process follows the Traditional Method: first fermentation in temperature-controlled vats, then racking, second fermentation, and aging in bottles on the lees for several months. Natural pump-overs and inoculation enhance aromatic complexity. The troglodytic layout of the winery ensures ideal thermal and hygrometric stability, limiting energy consumption and contributing to consistent aging. The “Terroir de Chazot” cuvée is made from grapes grown in a single plot, vinified separately to highlight the purity and character of the terroir.

Environmental commitment

The converted quarry, now a winery, offers naturally controlled temperatures, reducing the energy footprint. Since 2008, the winery has pursued a policy of vineyard management: 50% of the grapes are grown on the estate, the remainder comes from carefully selected growers. This model guarantees traceability, quality, and respect for the terroir. No excessive inputs are used: winemaking is restrained, with minimal use of sulfur, and cultivation practices promote soil health and biodiversity.
