Located 4 km from Chablis, in Fontenay-près-Chablis, Domaine du Colombier covers 55 hectares spread across the finest slopes of the Chablis vineyards. It produces wines from the four iconic appellations: Petit Chablis, Chablis, Chablis Premier Cru (Fourchaume, Vaucoupin), and Chablis Grand Cru Bougros. Philosophy and History
Domaine du Colombier has been a family estate since 1887, passed down through generations. In 1957, Guy Mothe specialized in Chablis winemaking, marking a turning point for the estate. Today, his three sons – Jean-Louis, Vincent, and Thierry – passionately carry on the legacy. This human-scale operation is based on a clear philosophy: to express the purity of the terroir without artifice, respecting Burgundian traditions and employing a rigorous technical approach. Thierry Mothe is also president of the Independent Winegrowers of the Yonne, a role that reflects his commitment to ethical and artisanal viticulture.
Production specifics
The vineyard work is carried out year-round by Vincent, with meticulous attention to each stage: double Guyot pruning from December to March, lowering in April, raising in June, trimming in July, and then mechanical harvesting in September or October at full maturity. In the cellar, Thierry and Marion Mothe take over with careful winemaking: pneumatic pressing, alcoholic fermentation in temperature-controlled stainless steel tanks, complete malolactic fermentation, and then aging in tanks or barrels for the Grand Cru Bougros. Each cuvée receives constant attention, balancing tradition and modernity, for a precise and authentic wine.
Recognitions
The estate produces nearly 430,000 bottles a year, 80% of which are exported. Its consistency and the quality of its Chablis – straightforward, mineral, and crystalline – are praised by both enthusiasts and professionals. The estate's reputation also rests on its membership in the Independent Winegrowers, which highlights its recognized family expertise.
