The Sélection Spéciale range is the most structured expression of Les Jamelles: carefully selected old vines on the best clay-limestone terroirs of the Languedoc, combined with partial ageing in oak barrels that brings depth and complexity. This Cabernet Sauvignon-Merlot 2024 (14% ABV) is an emblematic blend of two grape varieties of character, carefully vinified to bring out the best of both profiles: the structure of Cabernet and the roundness of Merlot. The colour is a deep garnet red with ruby highlights. The nose is complex: ripe blackcurrant and blackberry, then toasty and vanilla notes from the oak, with a hint of pepper in the background. The palate is broad, the attack fleshy, the tannins present but silky, and the finish long on sweet spices and cooked fruit. Pair it with braised red meats, game in sauce or aged hard cheeses. Decant 30 minutes before serving and serve at 16-17 °C; it can still improve for another 2 to 3 years.
