Saint-Romain, village perché à l'arrière de la côte, offre un terroir singulier : des sols calcaires et argileux à forte altitude, qui confèrent aux blancs une tension et une fraîcheur rares dans la région. Buisson y travaille avec une exigence absolue sur la qualité de la vendange, privilégiant une vinification peu interventionniste pour laisser le lieu s'exprimer pleinement.
La robe se pare d'un or pâle lumineux, traversé de reflets verts très nets. Le nez s'ouvre sur un bouquet élégant de fleur d'acacia et de chèvrefeuille, relayé par des notes de poire williams et de pêche blanche bien mûres. Unit price perLa robe est d'un rouge rubis clair. Le nez est élégant et précis : fraise, groseille, pivoine — la palette fruitée et florale du Pinot Noir dans son expression la plus légère. En bouche, la structure est bien construite : des tanins fins et soyeux, une belle tension et une acidité mordante qui donnent du caractère et de l'allant. La finale est longue et aromatique, avec des touches de fruits rouges et une légère pointe vanillée et fumée. À boire dans les 3 à 5 ans.
Un rouge polyvalent : buffet campagnard, échine de porc fumée, hamburger de qualité, œufs pochés en meurette, volaille rôtie. Servir à 13-15°C.

The vines are primarily planted in well-drained, stony, clay-limestone soils, which promote balanced ripening of the grapes. Christophe Buisson is a local. Trained in oenology and viticulture, he took over the reins of the family estate with a deep conviction: wine must be the sincere expression of a terroir, crafted with rigor and respect. In 2009, he began the conversion to organic farming, which was certified by Ecocert in 2012. His motto perfectly sums up his vision: "To have a good product, you need good raw materials and rigorous work in the vineyard as well as in the cellar." This approach, based on high standards and consistency, guides each stage of the production cycle, from the vine to the bottle.
Production specifics
Cultivation practices are tailored to each plot. Tilling begins in the spring and continues until the end of July. No herbicides or chemical pesticides are used: only certified organic products are permitted, favoring natural treatments based on plants and sulfur. The vines are pruned by hand, yields are controlled, and the soil is mechanically maintained to encourage microbial life. As harvest time approaches, a team of about twenty people carries out a careful manual harvest, ensuring optimal selection of the grape bunches.
In the cellar, vinification is carried out plot by plot, respecting Burgundian methods. For the reds, a portion of the grapes are kept as whole bunches, which contributes structure, freshness, and a refined vegetal note. Fermentation takes place in temperature-controlled stainless steel tanks. Aging lasts between 12 and 18 months, depending on the cuvée, in French oak barrels, the proportion of which is always carefully measured. Bottling is done without fining or filtration, following the lunar cycles to respect the wine's natural balance.
