Domaine du Clos des Rocs is located in Fuissé, in the heart of the Pouilly-Loché and Pouilly-Fuissé appellations. The vineyard, situated on an east-facing slope, rests on deep clay-limestone and high-altitude limestone soils, offering a great geological diversity. The estate's flagship plot, the "Clos des Rocs" monopole, covers approximately 3 hectares in the lieu-dit "Les Mûres." The vineyard benefits from an average altitude of 270 meters and an ideal exposure that promotes perfect grape ripeness.
Chardonnay
Coming from a winemaking family spanning seven generations, Olivier Giroux took over Domaine Saint-Philibert in 2002 and renamed it Domaine du Clos des Rocs. Aware of the vineyard's rich historical and natural heritage, he undertook a conversion to organic farming and then to biodynamic practices, respecting the soil, the vines, and biodiversity. The estate's ancestral legacy is thus enhanced by a modern and environmentally conscious approach, with the aim of producing authentic, precise, and vibrant wines.
The estate's history dates back to Roman times, with a notable expansion during the Middle Ages under the influence of the Cluny monks. The property was held for five centuries by the Bérard family before its acquisition by Olivier Giroux, who has passionately and rigorously combined tradition and innovation.
Organic viticulture has been practiced since 2014, with particular attention paid to soil health, notably through the introduction of sheep flocks to maintain the plots and limit the use of machinery. Olivier Giroux relies on precise manual work, regular tilling to revitalize the soil, and a judicious use of copper and sulfur-based treatments, following the lunar calendar.
The winemaking process is entirely natural, with slow fermentations using indigenous yeasts. Aging takes place in oak barrels with a controlled use of new oak, enhancing complexity and finesse without compromising the aromatic purity of the Chardonnay. The entire estate has been farmed biodynamically since 2021, demonstrating a long-term commitment to the health of the vineyard and the quality of the wines.
The wines of Domaine du Clos des Rocs are renowned for their elegance, finesse, and excellent aging potential. They express a beautiful mineral tension and a complex bouquet blending white fruits, flowers, and hazelnut notes.
