La robe est dorée, lumineuse, aux reflets ambrés subtils hérités du fût. Le nez s'articule autour de la fraîcheur du Chardonnay — poire mûre, pomme compotée, touche miellée — que l'élevage enrichit de vanille, d'amande grillée et d'une pointe boisée élégante, jamais dominante. L'attaque en bouche est ample et veloutée, puis la tension s'installe progressivement : la sucrosité naturelle du raisin structure la matière sans lourdeur, portée par une trame fraîche qui évite toute sensation sirupeuse. L'eau-de-vie élevée en fût apporte profondeur et persistance en finale.
Servi frais entre 8 et 10 °C, dans un verre à vin blanc, pour en apprécier pleinement la tension et la fraîcheur. Idéal en apéritif raffiné ou en alternative élégante à un vin moelleux en ouverture de repas ; s'accorde aussi avec un foie gras poêlé ou une tarte Tatin.

Un Ratafia bourguignon qui prend le contre-pied des versions trop sucrées : ici, le Chardonnay garde sa fraîcheur, et l'eau-de-vie élevée en fût apporte une profondeur qu'on n'attend pas. À servir frais comme un Sauternes léger — il surprend à chaque fois.
The colour is deep, almost black, shot through with intense violet glints, the natural signature of Noire de Bourgogne. The nose is immediate and vibrant: pure, concentrated, almost wild blackcurrant, with freshly crushed berry, skin and a slight noble herbaceous touch. On the palate, the attack is frank, then the tangy structure takes over and carries the fruit without heaviness. The sweetness is present but controlled (a far cry from syrupy liqueurs) and the finish stays fresh and clean.
As an aperitif in a precise kir (1 measure of cassis to 6 to 8 of Crémant brut), neat over ice in hot weather, or in cocktails: a low-sugar cassis and tonic, a reinvented spritz, a twist on a whisky sour. As an accompaniment: duck foie gras, a blue cheese such as Bleu de Gex, a 70% dark chocolate dessert or a red fruit soup.

Noire de Bourgogne grown next to the distillery, sorted by hand, with no added flavourings: you can taste it straight away, with a nose of rare purity for a blackcurrant liqueur. Perfect in a kir, but frankly too good to keep for that alone.

Au nez, la complexité s'installe immédiatement : vanille fine en ouverture, puis fruits secs, raisin macéré et amande grillée. Les fûts de Porto Rouge apportent une nuance de fruits noirs confits, le Moscatel insuffle une touche florale délicate. L'ensemble reste précis, jamais lourd. L'attaque en bouche est ample et enveloppante, la matière soyeuse et structurée, avec une montée progressive en intensité. Notes de caramel blond, noisette, fruits secs, pointe épicée des fûts neufs. La finale est longue, chaleureuse, avec une belle persistance boisée et un retour sur le fruit — l'alcool parfaitement fondu.
Servie à 16-18 °C dans un verre tulipe, avec quelques minutes d'aération. Un gros glaçon fonctionne aussi : la dilution progressive ouvre les arômes et accentue la rondeur. En cocktail, elle remplace avantageusement un whisky dans un Old Fashioned ou un Manhattan, avec plus de finesse et une identité vineuse unique. En accord : foie gras, chocolat noir intense, fromages affinés à pâte persillée.

Presque 7 ans d'élevage dans trois types de fûts différents — Moscatel, Porto, chêne neuf — et ça s'entend dans le verre : une complexité qui n'a rien à envier aux grandes eaux-de-vie de grain. JŌSEFINE est le genre de Fine de Bourgogne qui convertit ceux qui pensaient ne pas aimer le genre.
L'attaque en bouche est franche et structurée, portée par la colonne vertébrale classique de la genièvre, avant que les fruits rouges ne s'expriment avec générosité — douceur naturelle sans sucré. La matière est ronde, enveloppante, toujours tenue par une tension préservée. La finale révèle une fraîcheur mentholée presque cristalline, qui allonge le profil sans lourdeur. Un gin qui ne séduit pas par l'excès, mais par l'équilibre et la précision.
À déguster légèrement rafraîchi dans un verre à dégustation, avec un gros glaçon. En Gin Tonic, choisir un tonic neutre peu sucré, un zeste de citron frais et une baie de genièvre écrasée. S'accorde aussi avec un ceviche de dorade, un tataki de thon ou un dessert chocolat noir-fruits rouges.

Production methods
Distilling is now at the heart of Clos Saint Joseph. In 2019 the house acquired its own still, giving it complete independence in producing its spirits.
