Located in Aÿ, Maison Bollinger owns 180 hectares of vineyards, 85% of which are classified as Premier and Grand Cru. The vineyards encompass iconic plots in Aÿ, Verzenay, Louvois, Avenay and Tauxières (Montagne de Reims), Cuis (Côte des Blancs), and Champvoisy (Vallée de la Marne). Two legendary walled vineyards, Saint-Jacques and Chaudes Terres, remain ungrafted, untouched by phylloxera.

Founded in 1829 by Jacques Joseph Bollinger and Paul Renaudin, Maison Bollinger remains one of the few Champagne houses still family-owned. The Bollinger style rests on five pillars: an exceptional estate vineyard, a predominance of Pinot Noir, the use of reserve wines aged in magnums, barrel fermentation, and extended aging on the lees. Pinot Noir makes up more than 60% of the vineyard and the blends – a backbone that provides power, structure, and refinement. The grapes are harvested by hand, sorted, and vinified with uncompromising precision. The rare "Vieilles Vignes Françaises" cuvée is made from pre-phylloxera vines.
