Based in Aÿ, Maison Bollinger owns 180 hectares of vines, 85% of which are classified Premier and Grand Cru. The vineyard includes emblematic plots: Aÿ, Verzenay, Louvois, Avenay and Tauxières (Montagne de Reims), Cuis (Côte des Blancs) and Champvoisy (Vallée de la Marne). Two legendary clos, Saint-Jacques and Chaudes Terres, remain ungrafted, untouched by phylloxera.

Founded in 1829 by Jacques Joseph Bollinger and Paul Renaudin, Maison Bollinger remains one of the few Champagne houses still in family hands. Production specifics

The Bollinger style rests on five pillars: an exceptional house-owned vineyard, a predominance of Pinot Noir, the use of reserve wines kept in magnums, barrel fermentation and long maturation on the lees. Pinot Noir makes up more than 60% of the vineyard and of the blends, a backbone that brings power, structure and refinement. The harvest is done by hand, the grapes are sorted, and the juice is vinified to uncompromising standards. The rare "Vieilles Vignes Françaises" cuvée comes from pre-phylloxera vines.
