The estate is located in Mercurey, in the heart of the Côte Chalonnaise, on diverse terroirs composed of deep marl, calcareous clay, and stony soils derived from decomposed rock. The vines are planted between 230 and 320 meters above sea level, on Oxfordian marl-limestone soils, exposed to a climate blending Mediterranean, continental, and oceanic influences. These conditions offer a beautiful stylistic diversity, from powerful reds to rich and generous whites.

Philosophy and History

Coming from a line of winemakers spanning 11 generations, François Raquillet took over the family estate in 1990 after working alongside his father since 1984. With his wife Emmanuelle, he has instilled a new focus on quality, reducing yields and introducing high-quality oak barrels. Since 2018, their daughter Jeanne has joined the business, embodying the family tradition. The estate, which now covers 14 hectares, including 3.5 hectares of Premier Cru vineyards, has been managed using sustainable farming practices since 2016.

Production specifics

Work in the vineyard is meticulous: precise pruning, bud thinning, leaf removal, and soil management through tilling and cover cropping. Planting density reaches 10,000 vines per hectare, encouraging competition between the vines for better berry concentration. The harvest is entirely manual, followed by careful hand-sorting. In the cellar, the grapes are 100% destemmed and then gravity-fed into vats. Cold maceration precedes natural fermentation with indigenous yeasts. Racking takes place between 15 and 20 days, followed by gentle pressing. Aging occurs exclusively in French oak barrels, with one-third new each year, ensuring a subtle balance between structure and finesse.
