Production specifics

The grapes are harvested by hand, with strict plot selection. Each plot is vinified separately in stainless steel tanks and French oak barrels (15 to 30% new oak, depending on the cuvée). Aging lasts between 12 and 18 months, always with lees stirring for the whites and gentle racking for the reds. Yields are controlled (30–40 hl/ha) to concentrate the aromas and structure. There is no fine filtration or aggressive fining; a light filtration at bottling ensures clarity without altering the character.
