Le bouquet est délicat et précis : cerise griotte, framboise, fraise des bois, pivoine, violette — la palette florale et fruitée de Volnay dans son expression la plus accomplie. En bouche, la texture est aérienne et soyeuse, les tanins fins et fondus soutiennent une matière fluide mais persistante. La finale est subtilement épicée et fraîche, le profil est raffiné et charmeur. À boire jeune ou attendre 5 à 10 ans.
Volaille rôtie au jus, filet mignon aux girolles, pigeon aux herbes, moussaka aux légumes, tarte aux champignons et parmesan. Servir à 14-16°C.

The terroirs are composed of typical clay-limestone soils, with a favorable southeast exposure, offering remarkable minerality and depth. Founded by Jean Guiton, former winemaker at André Nudant, this family estate was born from passion and dedication. Initially through the leasing of plots, the estate gradually expanded to reach 12 hectares. Jean Guiton combines Burgundian tradition with a commitment to quality, prioritizing the expression of the terroir and the grape variety. His approach is respectful: minimal intervention, hand-harvesting, and natural winemaking. The stylistic vision aims for finesse, balance, and aging potential.
Production specifics
The grapes are harvested by hand, with strict plot selection. Each plot is vinified separately in stainless steel tanks and French oak barrels (15 to 30% new oak, depending on the cuvée). Aging lasts between 12 and 18 months, always with lees stirring for the whites and gentle racking for the reds. Yields are controlled (30–40 hl/ha) to concentrate the aromas and structure. There is no fine filtration or aggressive fining; a light filtration at bottling ensures clarity without altering the character.

The Domaine regularly receives excellent ratings in wine guides (Bettane & Desseauve, RVF), particularly for its Pommard and Beaune 1er Cru wines.
