Unit price perLa robe est d'un jaune pâle aux reflets argentés. Le nez est fin et précis : agrumes, fleurs blanches (aubépine), silex, noisette fraîche. En bouche, l'attaque est vive et directe, très tendue, avec une structure nette et une acidité parfaitement intégrée. La texture est crayeuse et saline, le développement sur agrumes mûrs, amande amère et silex, avec une finale longue, focalisée, presque verticale. Un grand blanc de garde, à boire dans les 5 à 10 ans.
Sole meunière, ceviche de dorade au citron vert, risotto d'asperges blanches, Saint-Jacques snackées, chèvre affiné ou poulet de Bresse à la crème. Servir à 10-12°C, décanter 30 minutes.

It spans over 16 hectares, 90% of which is planted with Chardonnay, with a few parcels of Pinot Noir and Aligoté. The estate produces 21 wines from an exceptional heritage: Premier Cru vineyards in Puligny-Montrachet (Les Perrières, Combettes, Folatières, Champ Gain), Chassagne-Montrachet, and Saint-Aubin, as well as several village appellations (Puligny, Chassagne, Saint-Romain) and regional appellations (Bourgogne, Mâcon-Igé, Aligoté). The brown, stony, and well-drained limestone soils, facing east, impart incomparable minerality and tension to the Chardonnay. Philosophy and History
Domaine François Carillon is the heir to a winemaking tradition dating back to 1520, embodied today by François Carillon, the 15th generation. After working alongside his father and brother from 1988, he founded his own estate in 2010. The estate's logo, adorned with the year 1611, comes from an engraving found on a stone in a historic cellar. It embodies the spirit of the place and the constant pursuit of precision. François Carillon now leads a loyal and close-knit team, with the desire to pass on his expertise to his children. The objective is clear: to accurately express the nobility of the Puligny terroir, through a rigorous, respectful, and sustainable approach.
Production specifics
The vineyard's cultivation relies on practices that respect the soil and the vines: no herbicides have been used since 1992, mechanical weeding (tractor or horse) is employed, manual pruning is carried out using the Guyot method, bud thinning is performed, and green harvesting is practiced when necessary. High planting densities (10,000 vines/ha) promote deep root development. Compost is made from shredded vine shoots and horse manure. The estate practices integrated pest management with minimal inputs (natural fungicides). In the cellar, the grapes are gently pressed (pneumatic press), the must is clarified, and then transferred directly to barrels. Alcoholic and malolactic fermentations take place in barrels (Tronçais, Allier), with aging on the lees for 12 months, followed by 6 months in tanks for homogenization. Alternative containers (large casks, cigars, menhirs) are being tested. The use of CO₂ helps to limit sulfur doses. Bottling is done at the estate, with a cork adapted to the level of the range, including Ardea Seal corks for regional cuvées.
