Le 2025 livre un rosé lumineux et précis. Le nez s'ouvre sur la pêche fraîche et les fruits jaunes, relevés d'une note presque saline, végétale noble, qui dit immédiatement l'influence marine du domaine. En bouche, le fruit est juteux sans jamais verser dans la lourdeur : la matière glisse, le milieu de bouche est soyeux, et la finale gagne en relief sur une fine tension épicée persistante. Tout ici est une affaire de précision.

Philosophy and History
The story begins in 1896, when Marcel Ott, a young agricultural engineer from Alsace, discovered Provence and planted the first seeds of what would become a legendary estate. Deeply convinced of his ability to produce great wines, he purchased Château de Selle in 1912, then expanded his holdings with Clos Mireille (1936) and Château Romassan (1956). A visionary, he already championed sustainable viticulture, with controlled yields, meticulous soil management, and hand-harvesting.
In 1932, René Ott designed the iconic bottle inspired by ancient amphorae and elegant cypress trees, which has become a symbol of Domaines Ott. Exports to the United States in 1933 marked the beginning of its international renown. Today, Christian and Jean-François Ott perpetuate this family and artisanal heritage, combining traditions passed down from Antoine with modern practices: certified organic farming, biodynamic influences, and viticulture in harmony with nature.
Production specifics
The care taken is exceptional: over 600 hours of work per hectare, compared to 200 to 300 in Provence. Each vine is inspected 47 times a year. Harvesting is done by hand, the grapes are meticulously sorted, and then the winemaking process is very gentle: limited maceration, fermentations at low temperatures, and delicate pressing. In the cellar, the wines are vinified by gravity, without added yeasts or enzymes, and aged for a long and respectful time—in large oak casks, stainless steel tanks, or demi-muids—to guarantee purity, finesse, and longevity.
Lunar cycles guide the bottling and bottling processes, reinforcing the harmony between the seasons and the vines. The use of sulfur is controlled, in accordance with organic and biodynamic specifications, which prioritize biodiversity, working the fallow land, and natural ground cover.
Recognitions
Ott wines are now considered absolute benchmarks for gastronomic rosé, particularly the **“Cœur de Grain”** cuvée, unanimously praised for its finesse, balance, and distinctive character. Their rosés are regularly ranked among the best in the world. Their Bandol reds and Provence whites are recognized by international guides, sommeliers, and critics. The estates have been members of the prestigious Roederer Collection Group since 2004, a testament to their excellence.
