Located in Cazelles, in the highest part of the Minervois region, bordering the Saint-Chinian appellation, Domaine Gros-Tollot covers approximately 15 hectares of vines. The vineyard rests on a unique terroir of sandstone and limestone, between 200 and 500 meters above sea level. This area, nicknamed "Le Causse," benefits from a temperate microclimate, with regular rainfall and slow ripening of the grapes. This fresh terroir produces wines that are deep, balanced, and ethereal, a far cry from classic southern styles.

Domaine Gros-Tollot was founded in 2006 by two prominent figures in Burgundy: Anne Gros, a winemaker in Vosne-Romanée renowned for her exceptionally refined wines, and Jean-Paul Tollot, from Domaine Tollot-Beaut in the Côte de Beaune. Driven by a desire for a new challenge, they chose to establish themselves in the Minervois region, drawn to the potential of Cazelles and its diverse terroirs. From the outset, their ambition was clear: to bring their Burgundian rigor and exacting standards to the South. They quickly acquired parcels of land on various soil types, built a modern and functional winery, and established a unique style, blending Mediterranean concentration with northern elegance. The first vintage, 2008, laid the foundation for an estate that, vintage after vintage, has steadily grown in precision and recognition.
The vineyard is managed according to the principles of sustainable agriculture, with a deep respect for biodiversity. The harvest is entirely manual, and the grapes are meticulously sorted. Vinification is carried out plot by plot, with spontaneous fermentations using indigenous yeasts, and gentle extractions to preserve the delicacy of the tannins. Aging takes place in a combination of stainless steel tanks, demi-muids, and oak barrels, carefully selected for their minimal aromatic influence. The objective remains the same: to let the terroir, the purity of the fruit, and the identity of each grape variety speak for themselves.
The wines of Domaine Gros-Tollot shine with their balance and originality. Each cuvée embodies a facet of the Cazelles terroir, while expressing the Burgundian touch of precision, freshness, and elegance. The “Les Carrétals” cuvée (old Carignan vines) offers a noble structure and remarkable mineral depth. “La Ciaude” reveals a spicy character, beautiful substance, and fine tannins. “Les Fontanilles,” a blend of Syrah, Carignan, Grenache, and Cinsault, seduces with its harmony between measured power and vivacity. “L'O de La Vie” expresses the youthfulness and lusciousness of the fruit. Each wine from the estate is crafted to reflect its origin, age gracefully, and evoke genuine emotion upon tasting. Their velvety palate, length, measured intensity, and great drinkability make them bottles of character and pleasure.
