Founded in 2018 by Jean-Charles Aubert and Anthony Mathieu, two childhood friends united by a shared passion for wine and a desire to do things differently, the estate was born from a genuine wish to shake things up. Their ambition: to produce modern, unpretentious, and committed wines, while showcasing the terroirs of Languedoc. With backgrounds in business and international trade, the founders combine expertise, curiosity, and exacting standards to offer wines with a strong identity. Each wine bearing the Aubert & Mathieu name is conceived as a creative work, combining technical precision, intuitive taste, and masterful storytelling.
As a wine merchant and producer, Aubert & Mathieu works closely with carefully selected partner winegrowers throughout the region. The harvest takes place early in the morning to preserve the freshness of the grapes. Vinification relies on natural fermentations with indigenous yeasts, following a minimal intervention approach. Each cuvée undergoes a bespoke aging process, designed to enhance the unique character of the blend.
