The Sélection Parcellaire is the most ambitious range at Les Jamelles: exceptional wines born of a unique alchemy between a specific terroir, an old vine, a grape variety and the hand of Catherine Delaunay. Carignan « Le Beillou » 2020 comes from a little-known plot in Languedoc-Roussillon, on poor, free-draining clay-limestone soils that force the vine to dig deep. With 15% ABV and an ageing potential of 3 to 5 years, this Carignan breaks radically with the usual image of the grape. The colour is a dense, dark garnet red, almost opaque. The nose is generous and complex: candied black cherry, black olive, wild garrigue and a touch of dark chocolate in the background. On the palate there is plenty of volume, the tannins are structured but velvety with age, and the finish is very long, spicy and persistent. Pair it with slow-cooked red meats, jugged hare or an aged ewe's milk cheese. Decanting for 45 minutes before serving is a must; serve at 17-18 °C.
