Catherine Delaunay proudly asserts her Burgundian roots in each of her Chardonnays: trained in Burgundy, she brings to the Languedoc a precise vision of this universal grape, working with controlled fermentations and ageing on fine lees to develop roundness and complexity. The Chardonnay vines are planted on the clay-limestone soils of the IGP Pays d'Oc, where the wide temperature swing between cool nights and hot days preserves a lovely natural acidity. The colour is golden yellow with green highlights. The nose elegantly blends white peach, pear and a buttery, lightly vanilla touch, betraying subtle ageing on the lees. On the palate, the texture is round and broad, the acidity well integrated, and the finish lingers on notes of brioche and fresh hazelnut. Ideal with poultry in a cream sauce, salmon cooked skin-side down on one side only, or pressed cheeses. Serve at 10-12 °C.
