Located in Givry, Burgundy, Domaine Laurent Mouton cultivates 12 hectares of vines spread across the Bourgogne, Givry, and Givry Premier Cru appellations. The clay-limestone terroir, typical of the Côte Chalonnaise, imparts great finesse and a distinct mineral expression to the wines. The estate is particularly renowned for its flagship cuvée, "Givry 1er Cru Clos Jus," a deep and structured wine that faithfully reflects the character of the soil and its exposure. Each plot is cultivated with precision according to its geology, altitude, and topography, guaranteeing varied and authentic expressions.
Pinot Noir, Chardonnay
Domaine Laurent Mouton is the fruit of a family passion passed down through four generations. It all began with Eugène, the great-grandfather, a pioneer of viticulture in Givry. His son, Charles, expanded the estate to 3 hectares. In 1968, Gérard and his wife, Armelle, took over, beginning winemaking and selling their first bottles in 1976. In 2002, Laurent Mouton joined the family estate, bringing new energy while preserving traditions. Today, the future is already being shaped under the watchful eye of his eldest son, heralding a fifth generation ready to take the reins.
The estate practices rigorous and sustainable viticulture. Disease control is carefully managed to promote a healthy and balanced ecosystem. The soils are regularly tilled, ensuring deep root systems and stimulating rich biological activity. Yields are intentionally limited to guarantee optimal grape ripeness, and each bunch is sorted in the vineyard to retain only the finest berries.
The winemaking process is carried out with respect for the grapes: the Pinot Noirs are 100% destemmed and macerate for 12 to 20 days at a controlled temperature. Aging in oak barrels lasts 12 months, with a balanced use of new oak and barrels that have previously held wine, particularly for the Premier Crus. For the Chardonnays, the grapes are immediately pressed, and the juices are then vinified half in temperature-controlled stainless steel tanks and half in 400-liter barrels. Eight months of aging on fine lees brings structure, complexity, and an elegant roundness to the Cuvée Excellence.
Domaine Laurent Mouton has established itself as a leading producer in the Givry appellation. Critics praise the finesse of the extractions, the aromatic precision, and the consistent quality of its wines. The "Clos Jus" cuvée is frequently cited as a benchmark for Givry Premier Cru.
