Aligoté: the fresh and mineral white grape variety from Burgundy

The Aligoté grape variety is a hidden gem of Burgundy, prized for its vibrant freshness, lively acidity, and mineral notes. This white wine, often seemingly simple, reveals a complexity and aromatic purity that captivates both amateurs and connoisseurs. The "Aligoté" collection from Vins de Carole celebrates this distinctive appellation, ideal for refreshing and indulgent tasting experiences.

Characteristics of the Aligoté grape variety

Aligoté produces light, often very dry wines with aromas of lemon, green apple, white flowers, and a pronounced minerality. This grape variety, less well-known than Burgundy's Chardonnay, brings a lovely vibrancy and pleasant freshness to the palate. It is often vinified without aging or in stainless steel tanks to preserve its fruity character and purity.

Regions and appellations

Primarily cultivated in Burgundy, particularly in the Côte Chalonnaise and Auxerrois regions, Aligoté is also the basis of the renowned Bourgogne Aligoté AOC . It is sometimes combined with organic or biodynamic practices to enhance its natural expression. This collection offers a carefully curated selection of authentic and expressive wines.

Food and wine pairings

Aligoté pairs perfectly with seafood (oysters, mussels), grilled fish, composed salads, and fresh cheeses such as goat cheese. Its freshness and vibrancy also make it an excellent companion for aperitifs or light summer dishes.

Tasting tips

Serve Aligoté chilled, between 8 and 10°C, in a tulip glass to fully appreciate its subtle aromas and lively character. Its pleasant acidity gives it good aging potential, but it is generally best enjoyed within 2 to 3 years of the harvest.
