Grand Calcaire originates in the heart of the Chablis appellation in northern Burgundy. This iconic vineyard rests on the renowned clay-limestone marls of the Kimmeridgian period, imparting a sharp minerality and remarkable tension to the wines. Laurent Delaunay and Dominique Gruhier have selected cool, often north-facing plots on misty, low-exposure slopes to accentuate the purity and intensity of the aromatic profile. This rigorous plot selection is carried out in partnership with local winegrowers who share their commitment to quality.

Grand Calcaire was born from the union of two renowned figures in the Burgundy wine region: Dominique Gruhier, an experienced winemaker in Chablis, and Laurent Delaunay, a passionate oenologist and entrepreneur. Their shared ambition: to offer a contemporary interpretation of the great wines of Chablis, faithful to their minerality and freshness, but with enhanced complexity. Heirs to a family tradition, they share a common vision of the terroir and a quest for precision. The name Grand Calcaire expresses both the geological identity of the vineyard and their desire to craft wines with strong personalities.
The grapes come from carefully selected plots chosen for their natural freshness and their ability to express the terroir's minerality. Winemaking is overseen by Dominique Gruhier and his team in the cellars of the Abbaye du Petit Quincy estate, a place steeped in Cistercian history. Fermentation is carried out with precision, and aging is carefully adjusted to preserve tension, aromatic purity, and minerality. Regular tastings, rigorous monitoring, and refinement of the blends allow for the definition of a clear style: expressive, structured, and vibrant.
Although young, the Grand Calcaire brand has already established itself as a demanding name in the world of great white Burgundy. Its precise and contemporary style, praised by both amateurs and professionals, captivates with its ability to combine aromatic intensity, structure, and freshness.
