Philosophy and History

Abbotts & Delaunay was born from the meeting of Nerida Abbott, an Australian oenologist, and Laurent Delaunay, from a long line of Burgundian winemakers. In 2005, Laurent acquired the estate with the aim of expressing the richness of the Languedoc region in a premium style. In 2024, his daughter, Jeanne Delaunay, took over the reins, embodying a modern and sustainable vision of winemaking. The estate's approach is inspired by Burgundy: meticulous vineyard management, refined winemaking techniques, respect for the terroir, and a constant pursuit of freshness and balance.

Production specifics

Winemaking relies on a rigorous selection of plots. The grapes are harvested at perfect ripeness, often by hand. Vinification is carried out varietal by varietal, with gentle extraction, followed by extended aging in tanks or French oak barrels to refine structure and complexity. Domaine de la Métairie d'Alon (25 hectares of organic vineyards at altitude), located near Magrie, is emblematic of this quest for elegance: it allows the Delaunay family to produce some of the finest Pinot Noir and Chardonnay wines of the Languedoc, from plot selections of exceptional precision.
