The IGP Pays d'Oc is an iconic appellation of Languedoc-Roussillon, which has established itself as one of the leading lights of modern French viticulture. Officially created in 1987, it embodies diversity, innovation, and accessibility. The IGP (Protected Geographical Indication) label allows winemakers greater freedom in their choice of grape varieties and blends, enabling them to offer authentic, expressive, and always approachable wines.
Spanning over 120,000 hectares, the Pays d'Oc IGP stretches from the Mediterranean coast to the foothills of the Cévennes and the Pyrenees, covering the entire Languedoc-Roussillon region. This vast geographical area allows for an incredible variety of soils and microclimates. The vines benefit from abundant sunshine, low rainfall, and a wide diversity of terroirs, ranging from rolled pebbles and red clay to limestone and schist.
The richness of the Pays d'Oc also lies in the incredible diversity of its grape varieties. It boasts both traditional Mediterranean varieties (Grenache, Carignan, Cinsault, Syrah, Mourvèdre) and international varieties (Merlot, Cabernet Sauvignon, Chardonnay, Sauvignon Blanc, Viognier). This range allows winemakers to express their creativity and produce wines of varied styles: single varietals, blends, aged in oak barrels or stainless steel tanks, and more.
Pays d'Oc red wines offer a range from fruity, supple, and approachable cuvées to more structured and complex wines aged in oak barrels. The white wines, whether dry or lightly aromatic, are appealing for their freshness, vibrancy, or roundness, depending on the grape variety. The rosés, delicious and refreshing, are perfect as an aperitif or in summer.
The possibilities for food and wine pairings are numerous: a smooth red will complement grilled meats, pizza, or charcuterie. A crisp Chardonnay will enhance grilled fish or a composed salad. A more expressive Viognier will pair well with exotic dishes, and a fresh rosé will be a perfect match for Mediterranean cuisine.
