The IGP Terres du Midi appellation encompasses a vast wine-growing area in the south of France, primarily in Occitanie . This Protected Geographical Indication offers winemakers considerable freedom in blending and creativity, while guaranteeing a strong connection to the Mediterranean terroir. The resulting wines are distinguished by their approachability, freshness, and aromatic richness . They appeal to a wide audience thanks to their excellent value and convivial style, typical of the South.
Created in 2018, the IGP Terres du Midi appellation encompasses four former IGPs: Pays d'Oc, Comté Tolosan, Côtes de Thongue, and Coteaux de Bessilles. It allows for considerable freedom in the choice of grape varieties, winemaking methods, and blends, while promoting local expertise. This flexibility results in a diverse range of wines , expressing the richness of the soils, climates, and winemaking traditions of the South of France.
The red wines are primarily made from Grenache, Syrah, Merlot, Cabernet Sauvignon , or Carignan grapes . They offer aromas of ripe red fruit, sweet spices, and sometimes notes of garrigue or licorice. Supple and round, they are enjoyable young, but some more structured cuvées benefit from aging.
Rosé wines, very popular in summer, are fresh, fruity, and offer a variety of profiles: from pale Provençal rosé to the more intense rosé typical of Languedoc. They are ideal as an aperitif or with Mediterranean dishes.
White wines , made from Chardonnay, Sauvignon Blanc, Vermentino, Colombard, or Muscat grapes , are often lively and aromatic, with aromas of citrus, white flowers, or exotic fruits. They pair well with seafood, summer salads, or fresh cheeses.
The IGP Terres du Midi benefits from a warm, sunny climate, tempered by maritime influences. This results in generous, expressive, and balanced wines. Moderate yields and modern winemaking techniques produce clean, straightforward wines with well-defined aromas. They are designed to be enjoyed young, in a spirit of sharing and immediate pleasure.
Red wines pair perfectly with grilled meats, tapas, charcuterie, or Mediterranean dishes. Rosé wines are ideal with composed salads, pissaladière, or light Asian cuisine. White wines enhance seafood, grilled fish, fresh cheeses, or a summer aperitif.
At Les Vins de Carole, we celebrate this vibrant appellation through a selection of authentic, balanced, and approachable wines. Ideal for discovering the flavors of the South without compromising on quality. Each bottle is chosen for its freshness, aromatic expression, and immediate enjoyment, whether it be red, white, or rosé.
