Which wines should you choose for 5 to 10 years of ageing?

Between 5 and 10 years, a great wine undergoes a metamorphosis. The primary fruit aromas give way to complex tertiary notes: undergrowth, truffle, spices, leather, and beeswax for the whites. The tannins soften, the texture becomes finer, and the whole gains in harmony and depth. This is the window of great emotions for those who have known how to wait, and our selection has been built precisely for this moment.

Great reds: Burgundy and the Rhône

Burgundy Premiers Crus reach their peak in this window. The cuvées from Domaine Fontaine-Gagnard in Chassagne-Montrachet, Domaine Charton in Mercurey or Edouard Delaunay in Nuits-Saint-Georges Premier Cru fully reveal themselves after 6 to 8 years. In the Northern Rhône, a Côte-Rôtie from Domaine Christophe Pichon or a Crozes-Hermitage from Alain Graillot unfolds its aromatic complexity after 5 to 7 years. A Châteauneuf-du-Pape from Château Gigognan also belongs in this category, with its generous structure.

Great whites: Burgundy and the Rhône

Great white Burgundies are the stars of this window. A Meursault from Edouard Delaunay or Michel Bouzereau, a Puligny-Montrachet from Domaine Gérard Thomas or a Chassagne-Montrachet Premier Cru from Fontaine-Gagnard reveals exceptional complexity and depth after 6 to 8 years. Northern Rhône whites (Condrieu from Domaine Chirat, Saint-Joseph whites) age in a more unusual way, with notes of candied yellow fruit and assertive minerality.

Storage and serving advice

For 5 to 10 years of ageing, storage conditions become more demanding: a stable temperature between 11 and 13 °C, humidity of around 70%, and no vibration or light whatsoever. Before serving, decant the reds for 1 to 2 hours to aerate them gradually. The whites are served at 12 to 14 °C, less chilled than usual, to let the wine open up in the glass.
