Which wines should you cellar for 3 to 5 years?

Ageing for 3 to 5 years is the most accessible option for anyone starting a cellar: it takes little space and little investment, and the rewards are already remarkable. A wine that seemed a little closed when first opened reveals, after a few years, its tertiary aromas, its softened tannins and its fuller complexity. This is the ideal window for village Burgundies, Côte Chalonnaise wines, some Northern Rhônes and the age-worthy whites of the Mâconnais.

Reds: Burgundy and the Rhône lead the way

Burgundy Pinot Noirs at village or premier cru level are natural candidates for short-term ageing. After 3 to 5 years, their fresh cherry aromas are enriched with notes of undergrowth, sweet spice and tobacco. The cuvées from Domaine Vincent Lumpp in Givry, Domaine François Raquillet in Mercurey or Edouard Delaunay in Hautes-Côtes de Nuits fit perfectly into this window.

In the Northern Rhône, a structured Syrah-based Crozes-Hermitage such as the one from Domaine Combier, or a fleshy Saint-Joseph, gains considerably in complexity after 4 to 5 years in the cellar. The Languedoc and the Rhône Valley also offer some fine opportunities: a well-built Minervois or Ventoux develops elegantly over this period.

Whites: Mâconnais and Alsace

Mâconnais Chardonnays (Viré-Clessé, Saint-Véran, Pouilly-Fuissé) develop a lovely buttery roundness and very appealing hazelnut notes after 3 to 4 years. The Chablis Premiers Crus from Grand Calcaire or Bernard Michaut reach their peak within this window. An organic Crémant d'Alsace from Domaine Muré, aged sur lattes, is also a lovely discovery after 3 years.

Storage tips

Store these wines lying down, between 12 and 14 °C, away from light and vibration. A service cellar or a temperature-controlled wine cabinet is more than enough. Open the reds 30 to 60 minutes before serving and the whites 15 minutes before. These wines do not need to be decanted: their development remains delicate and overly abrupt aeration could tire them.
