Lively wines: freshness as a signature

A lively wine is one whose natural acidity structures everything: the fruit, the length, the mouthwatering appeal. This is not aggressive acidity: it is a tension that gives drive, that makes the wine digestible and thirst-quenching, and that calls for food. Our selection of lively wines is built around Aligoté de Bourgogne, the historic white grape of the Côte, unfairly overshadowed by Chardonnay, yet whose finest expressions, made by great estates, rival many better-known wines.

Aligoté de Bourgogne: the lively wine par excellence

Aligoté is the historic white grape of Burgundy, planted on the coolest soils, where Chardonnay would not give of its best. In the hands of great growers, it reveals a mineral tension and a lemony freshness that few grape varieties can match. Our Aligoté selection brings together cuvées from Rémi Jobard, Marc Colin and Philippe Girard: three estates whose reputations rest on their Meursault, Chassagne and Corton, but which make Aligotés of remarkable precision and purity. Rémi Jobard's Vieilles Vignes cuvée, in particular, is one of the absolute benchmarks of the appellation.

Beyond Aligoté, our selection includes a few lively whites from the south, such as Saint-Chinian blanc from Abbotts & Delaunay and Crozes-Hermitage blanc from Domaine Combier, which bring a different, more southern aromatic tension that is every bit as invigorating.

Pairings and serving

Lively wines are natural partners for crustaceans, shellfish, fish in light sauces, fresh goat's cheeses and lemony starters. Aligoté is the traditional ingredient of Kir, but it deserves much better: serve it between 9 and 11 °C in a medium-sized white wine glass to appreciate its tension and its fruit.
