Founded more than three centuries ago, Maison Jean Fournier is one of the historic estates of Marsannay in the Côte de Nuits. Laurent Fournier has led it towards organic and biodynamic viticulture with great rigour, making the estate one of the pioneers of Marsannay white wines. This Bourgogne "Origines" is the gateway to the estate's world: a Chardonnay from vines in and around Marsannay, vinified in the low-intervention style characteristic of the house (minimal extraction, a gentle approach) to produce finely chiselled wines of great aromatic purity. Measured ageing preserves freshness.

The colour is a brilliant pale yellow. The nose opens on white flowers, ripe lemon, pear and fresh hazelnut. The attack on the palate is lively, supported by good substance that brings roundness. The whole is balanced and taut, with a saline, thirst-quenching finish. A white Burgundy of precision and freshness, to drink within 2 to 3 years.

Cod ceviche with yuzu, roast chicken with lemon, mushroom and Parmesan risotto, Comté aged 12 months, fresh goat's cheese. Serve at 10-12°C.
