This white Languedoc from Abbotts & Delaunay is a blend of Grenache Blanc and Vermentino, carefully built from three complementary terroirs. At the foot of the Montagne Noire, Quaternary limestone and marl bring depth and structure. On the shores of the Bassin de Thau, the maritime influence and damp limestone weave a saline, mineral thread. Near Pézenas, slopes of siliceous gravel produce wines with dazzling aromatics. The grapes, picked at the end of the night to preserve the freshness of the aromas, reflect a viticulture that respects biodiversity. The colour is pale, clear and bright. The nose opens on white flowers (orange blossom, hawthorn) before revealing mandarin and verbena. The palate is broad and silky, carried by lovely freshness in which citrus (bergamot, Corsican clementine) sits alongside a touch of aniseed and light notes of apricot. The long, mineral finish ends on a discreet salinity that bears the stamp of the terroir. Serve well chilled, at 8°C, as an aperitif with tapas or a sea bream ceviche. Also excellent with asparagus risotto, poultry with citrus or burrata with lemon zest.
