Which wine to serve with raclette or fondue?

Melted cheese dishes call for fresh wines that lighten the richness without overpowering the cheese. Dry whites are the safest allies, and reds should stay supple and low in tannin. Here is our wine merchants' selection for winter tables.

Whites, the first choice

A dry white with lively acidity cleanses the palate between mouthfuls: Chardonnay from Burgundy (Mercurey, Saint-Romain, Bourgogne Chardonnay) or fuller whites from the Rhône, such as white Saint-Joseph or Lirac. Serve them between 10 and 13 °C.

Supple reds

If the table prefers red, choose a Pinot Noir from Burgundy or a Gamay from the Côte Roannaise, fruity and low in tannin, served at around 15 °C. Firm tannins clash with melted cheese and leave a bitter impression.

Our pairings by dish

  • Raclette: a crisp dry white, or a light, fruity red
  • Fondue: a fresh, mineral white
  • Tartiflette: a more structured white or a supple red
  • Slow-cooked dishes in sauce: a fuller-bodied red with mellow tannins
