Which wines go with white meats?

White meats (veal, pork, rabbit, turkey, escalopes) all have delicate, lean flesh whose flavour varies considerably depending on how it is cooked. A blanquette de veau in a creamy sauce does not call for the same wine as a pork chop grilled with thyme or a pork tenderloin en croûte. It is this diversity that makes pairing wine with white meats so interesting: the pairings cover almost the entire spectrum of wine (white, light red, rosé, sparkling), provided you follow a few simple principles.

White wines: the go-to choice

For white meats cooked in a sauce (blanquette, fricassée, escalope in cream sauce, veal fillet cooked with Chablis), white wine is the natural pairing. The golden rule: match the intensity of the wine to that of the sauce. A Chablis or a Petit Chablis from our Grand Calcaire selection brings the ideal minerality and freshness for a light or lemony sauce. For richer, creamier sauces, step up a notch with a Mâcon-Villages, a Saint-Véran or a Viré-Clessé: southern Burgundy Chardonnays with round, generous profiles, perfectly suited to this kind of pairing.

For more aromatic dishes (pork with apricots, turkey with ceps, rabbit in mustard sauce), a Viognier with notes of peach and acacia or a Loire Chenin with its natural tension brings a lovely aromatic resonance. Our Les Jamelles selection offers several varietal wines (Viognier, Chardonnay, Gewurztraminer) that are ideal for these everyday pairings.

Light reds: the unexpected pairing

A low-tannin red, served lightly chilled (14-15 °C), can make a remarkable pairing with grilled or roast white meats. Burgundy Pinot Noir is the benchmark grape here: its finesse, red fruit and lack of aggressive tannins make it the ideal companion for a grilled veal chop or roast pork with rosemary. The cuvées from Maison Edouard Delaunay (Bourgogne Pinot Noir, Givry) and the organic Pinot Noir from Abbotts & Delaunay offer this profile with great consistency. A Beaujolais Gamay or a Languedoc Cinsault can also play this role with simpler dishes.

Rosés, sparkling wines and special occasions

For summer meals, buffets or white meats served cold, a dry, mineral Provence rosé is often the most elegant solution. The cuvées in our Provence selection are perfectly suited to it. A Crémant de Bourgogne or a Brut Champagne can also be a pleasant surprise with a rabbit terrine or a turkey stuffed with chestnuts: the bubbles cut through the textures and bring welcome freshness.

Whatever your recipe, one simple rule applies: avoid wines that are too oaky, too tannic or too high in alcohol, as they overwhelm the delicate flesh of white meats instead of showing it off. Choose precision over power.
