Which wines go with poultry?

Poultry is the wine lover's ideal ally: its fine flesh and the great variety of ways it can be prepared let you explore almost every style. A roast chicken does not call for the same wine as duck with cherries or guinea fowl en cocotte. But one thing never changes: avoid wines that are too tannic or too powerful, which would overwhelm the delicacy of the flesh. Finesse and balance are the watchwords.

White wines: the precise pairing

For poultry roasted or cooked in a creamy sauce (chicken in cream sauce, capon with morels, stuffed turkey), Burgundy Chardonnay is the benchmark pairing. Its roundness, gentle richness and freshness echo the richness of the sauces without overwhelming them. Our white Burgundy selection covers every level: from an affordable Viré-Clessé for a Sunday chicken to the Meursault and Saint-Aubin from Maison Edouard Delaunay or Domaine Gérard Thomas for more refined dishes.

For poultry grilled with herbs or marinated in citrus, a livelier white is the obvious choice. Tariquet Premières Grives, a lightly sweet Gros Manseng from the Côtes de Gascogne, makes an original and very successful pairing with poultry cooked with citrus or exotic fruit. A white Sancerre from Domaine Fournier Père et Fils, for its part, brings the ideal tension and liveliness for cold poultry or poultry salads.

Light reds: the Sunday lunch pairing

A low-tannin red, served lightly chilled, is often the best partner for a roast free-range chicken or guinea fowl with thyme. Burgundy Pinot Noir is the natural choice: its cherry aromas, silky palate and lack of aggressive tannins create perfect harmony. The organic Pinot Noir cuvées from Abbotts & Delaunay and the Hautes-Côtes de Nuits Burgundies from Edouard Delaunay offer this profile with great consistency.

For duck (fattier and more powerful), step up a notch: a Givry Premier Cru from Domaine Vincent Lumpp or a Mercurey Premier Cru from Domaine Charton brings the necessary structure without sacrificing elegance. A Nuits-Saint-Georges from Machard de Gramont also plays this role very well with braised duck or pan-fried duck breast.

Rosés, sparkling wines and serving tips

For poultry served cold, in salads or at a summer buffet, a dry Provence rosé from our Provence selection is often the most elegant and simplest solution. A Crémant de Bourgogne or a Brut Champagne can also be a pleasant surprise with a Christmas capon or poultry stuffed with truffles: the bubbles cut through rich textures with great style. For serving: whites between 10 and 12 °C, light reds between 14 and 16 °C, rosés at 10 °C.
