Grand Calcaire is a brand dedicated to the Chablis appellation, whose name pays tribute to the Kimmeridgian formations: marine limestones from the Upper Jurassic, studded with fossilised Exogyra virgula oysters, that define the unique subsoil of the Chablis vineyards. At the northern tip of Burgundy, in the Yonne, the Chablis appellation owes its reputation to a tension and saline minerality that these ancient soils impart to Chardonnay better than any other terroir in the world. The 2025 vintage, marked by lovely late-season freshness after a sunny summer, has produced lively, precise wines of great purity.

The colour is pale yellow with silvery highlights, with the brilliance typical of young Chablis. The nose is floral and mineral (acacia, lime, wet flint) with the iodine touch characteristic of Kimmeridgian soils. The palate is taut and straight, with cutting acidity and a mineral salinity on the finish that unmistakably signals the appellation. Light body, clean persistence. 12.5% ABV: serve well chilled, between 8 and 10°C.

A classic, unbeatable match for oysters, seafood, scallop tartare or sea fish in a light sauce. Also works well with a board of fresh local goat's cheeses.
