With nearly 300,000 bottles produced each year, La Chapelle is the emblem of Château Pigoudet: the house's signature rosé, the one that best embodies the luminous identity of the Coteaux d'Aix-en-Provence. The vineyard, north of Aix, enjoys constant natural ventilation that tempers the Mediterranean sun and preserves the freshness of the grapes. Harvested at night from vines averaging 20 years old, the fruit reaches the cellar cool and in perfect condition. The Cinsault-led blend (Cinsault being the quintessential Provençal grape, king of lightness) is completed by Grenache, Syrah and Cabernet to create a delicate, instantly appealing rosé. The colour is pale and bright, lightly pink with crystalline highlights. The nose is delicate and floral: small red berries (raspberry, strawberry), white flowers and a hint of citrus at first, followed with aeration by touches of white peach and delicate zest. The dominant Cinsault gives a light, airy texture: the palate is fresh and supple, with a liveliness that discreetly structures the whole; the clean, thirst-quenching finish effortlessly calls for another glass.

Serve well chilled (8-10°C) with a sea bream tartare with citrus or a burrata salad with heirloom tomatoes, two summer pairings where the wine's delicacy reveals its precision. Drink within the year to enjoy all its aromatic brightness.
