A family estate since 1945, Domaine Cordier embodies a perpetual quest for excellence and respect for the raw materials. Christophe Cordier, a demanding and visionary winemaker, now manages the estate with undiminished passion and a deep commitment to biodiversity and sustainable viticulture. Located in Fuissé, the historic heart of the Mâconnais region, the estate cultivates an exceptional mosaic of over 120 parcels spread across 9 villages, totaling 31.5 hectares exclusively dedicated to Chardonnay, the sole grape variety and king of the estate.
Appellations and terroirs
Domaine Cordier spans the diverse and precious terroirs of the Mâconnais region, including the prestigious appellations of Pouilly-Fuissé (including several Premier Crus), Saint-Véran, Viré-Clessé, and Pouilly-Loché, as well as various regional and village appellations. The soils, rich in limestone, clay, and marl, and the vineyards' exposure promote optimal ripeness and an intense, refined aromatic expression.
Know-how and viticulture
Since 2018, the estate has rigorously applied the principles of organic and biodynamic viticulture, and has been certified AB and DEMETER since 2024. Christophe Cordier prioritizes meticulous manual work: short pruning, severe bud thinning, manual leaf removal, soil cultivation using animal traction, controlled cover cropping, and the use of biodynamic preparations dynamized according to the lunar calendar. This approach maintains living soils and vines resilient to current climate challenges, while promoting natural balance and grape quality.
Winemaking and aging
The grapes are harvested exclusively by hand, with rigorous sorting. Vinification is tailored to the specific characteristics of each plot, using only indigenous yeasts and favoring extended aging on the lees in climate-controlled cellars. The estate has three barrel cellars and one large oak cask cellar, all equipped for optimal temperature and humidity control, ensuring meticulous work to reveal the full finesse and complexity of the Chardonnay.
Bottling is carried out by gravity, without fining and with minimal filtration, preserving the integrity and purity of the wines. Since 2023, the bottles have been waxed with a natural wax to eliminate the non-recyclable aluminum capsule and limit the addition of sulfites.
