Production specifics
At Domaine Rapet, vine cultivation relies on meticulous practices. Bud thinning, trellising, and leaf removal on the east-facing row promote optimal grape ripening while ensuring natural ventilation to limit disease. Mechanical soil work (hilling, hoeing, and tractor use for maintenance in the Burgundian style) preserves soil structure and encourages biodiversity.
Viticulture is practiced using sustainable farming methods, with minimal treatments adapted to climatic conditions, thus controlling yields to extract the best from each terroir. The harvest is carried out exclusively by hand, with the grapes collected in small crates to preserve their integrity.
For the white wines (primarily Chardonnay, with an entry-level Aligoté from Bourgogne), the grapes arrive unharvested at the winery and are then gently pressed for three hours in a pneumatic press. After 24 hours of cold settling, fermentation begins in barrels, 30% of which are new. Aging on the lees with bâtonnage (lees stirring) continues until July, followed by bottling after 12 months.
The red winemaking process prioritizes respecting the fruit and structure: after meticulous sorting, fermentation lasts 15 days with punch-downs to extract color and tannins, followed by aging in barrels, 20% of which are new. Racking is done manually using bellows, without a pump, to minimize handling and preserve the full richness of the juice.
