Production specifics

- Harvesting: exclusively manual, with careful sorting in the vineyard to harvest only the perfectly ripe bunches. - Destemming and crushing: the grapes are lightly crushed before pressing, guaranteeing an extraction that respects the fruit. - Winemaking: short macerations (for reds and whites depending on the cuvée) and gentle pressing. The best juices are selected for the main cuvée. - Fermentation: carried out at controlled temperature, mainly in stainless steel tanks, but some vintages benefit from aging in barrels. - Aging: on fine lees, for several months, in order to bring aromatic complexity, roundness and texture to the wine.
