Unit price perLa robe est d'un jaune pâle aux reflets verts, cristalline. Le nez est immédiat et net : citron vert, pamplemousse, une touche florale légère. La bouche est vive et tranchante dès l'attaque — l'acidité naturelle du Picpoul est sa signature, elle donne une fraîcheur désaltérante et salivante qui appelle le verre suivant. La finale est courte et iodée. À boire dans l'année, très frais.
Les huîtres et fruits de mer sont l'accord parfait — un classique absolu. Également sur des poissons grillés au citron, sardines à l'escabèche, sushis. Servir à 8-9°C.

- Harvesting: exclusively manual, with careful sorting in the vineyard to harvest only the perfectly ripe bunches. - Destemming and crushing: the grapes are lightly crushed before pressing, guaranteeing an extraction that respects the fruit. - Winemaking: short macerations (for reds and whites depending on the cuvée) and gentle pressing. The best juices are selected for the main cuvée. - Fermentation: carried out at controlled temperature, mainly in stainless steel tanks, but some vintages benefit from aging in barrels. - Aging: on fine lees, for several months, in order to bring aromatic complexity, roundness and texture to the wine.
