Reflets Secrets est le rosé de gastronomie signature de Les Jamelles, né de la conviction de Catherine Delaunay que le Languedoc-Roussillon peut rivaliser avec les plus grandes régions productrices de rosé. Ce Magnum 1,5L de la cuvée 2024 reprend l'assemblage emblématique — Cinsault, Grenache noir, Mourvèdre, Syrah — sur des terroirs argilo-calcaires de l'IGP Pays d'Oc, avec la touche secrète de Mourvèdre pour la profondeur et la persistance. Le format Magnum garantit une évolution plus lente et une fraîcheur maintenue plus longtemps une fois ouvert. La robe est rose pêche aux reflets saumonés profonds. Le nez associe fraise des bois, pamplemousse rose, fleurs blanches et une pointe épicée apportée par la Syrah et le Mourvèdre. En bouche, l'ampleur est soyeuse, l'acidité bien intégrée, et la finale se distingue par sa longueur et sa complexité — rare pour un rosé. À réserver pour un repas festif : langouste grillée, poissons fins en sauce, cuisine méditerranéenne élaborée. Servir à 10-12 °C ; le Magnum se maintient ouvert 2 à 3 jours au frais.

Le Reflets Secrets est le rosé premium de Les Jamelles — une cuvée qui monte d'un cran en complexité par rapport aux Petites Jamelles. Ce Magnum 1,5L est sa forme la plus festive : parfait pour les grandes tables, les soirées entre amis, ou simplement pour allonger le plaisir sans devoir rouvrir une bouteille. L'assemblage Cinsault, Grenache, Mourvèdre, Syrah sur les terroirs du Pays d'Oc donne un rosé plus structuré, plus long en bouche, avec une palette aromatique plus élaborée que les rosés d'entrée de gamme.

La robe est rose saumon élégant. Le nez est fruité et floral : fruits rouges délicats, pêche, nuances florales légères. La bouche est fraîche et équilibrée, plus de matière que les rosés de convivialité de la gamme, une finale propre et persistante. Un rosé de repas autant que d'apéritif, taillé pour les grandes occasions.

Apéritif, poissons en sauce, viandes blanches légères, cuisine méditerranéenne. Servir à 8-10°C. À boire dans l'année.

Grenache, Cinsault and Syrah grown on the clay-limestone soils of Provence, vinified by direct pressing. 2023, a sunny vintage in Provence, shows a lovely roundness and slightly more generous fruit than cooler vintages. Last bottles available: grab them before stock runs out. The colour is a pale, clear and bright pink. The nose offers aromas of ripe strawberry, peach and light flowers. On the palate the texture is round and supple, the finish fresh and thirst-quenching. An easy-drinking summer rosé, to be enjoyed chilled for its fruit. Aperitif, fine charcuterie, light grills, fresh goat's cheese. Serve between 8 and 10°C.

The « Les Graves » plot of Domaine de la Métairie d'Alon stands out for its unusual position: 250 metres above sea level, in a cool corridor swept by westerly winds, on steep slopes facing due west. The vines, farmed organically using Burgundian methods, are rooted in a very stony clay-limestone soil, the direct source of the minerality that marks this rosé. Whole bunches are pressed immediately by hand, with the first and last juices set aside to keep only the heart of the pressing at low pressure. Cold settling without sulphur, then fermentation in stainless steel tanks, preserve all the liveliness of the 2023 vintage. The colour is pink with bluish highlights. The nose opens first on bright citrus (lemon, Corsican clementine) before delicate floral notes of orange blossom heighten its elegance. The attack is round and generous, then citrus tension and a flinty, gunflint minerality gradually take over. The exceptionally long finish stretches out on a noble grapefruit bitterness and a hint of aniseed. Serve at 8°C with shellfish (grilled lobster, prawns with saffron, braised scallops), a red tuna tartare, grilled fish or duck with sweet spices.
