Languedoc – Minervois La Livinière
Located in La Livinière, the most prestigious area of the Minervois appellation, Château Sainte Eulalie enjoys an exceptional location on the slopes of the Petit Causse plateau. The vineyard stretches across 34 hectares of south-facing terraces at an altitude of 250 meters, sheltered from the north winds. The very stony, predominantly clay-limestone soils, rich in manganese, naturally limit erosion, promote moisture retention, and give the wines structure and freshness. The estate is nestled on the southern slopes of the Montagne Noire, overlooking the Aude Valley, facing Mont Alaric. This terroir, bathed in sunshine and influenced by both Atlantic and Mediterranean climates, offers a unique environment for the vines.

Château Sainte Eulalie is run by Isabelle and Laurent Coustal, who live in the heart of the vineyard. Rooted in a family-run, artisanal approach, they are dedicated to showcasing the best of every plot of their estate. Their vision: to produce wines that reflect the unique character of the La Livinière terroir, while respecting the environment and natural balance. All their wines are produced under the Minervois or Minervois La Livinière Appellation d'Origine Contrôlée (AOC), reflecting their commitment to prioritizing quality over quantity. The couple's exacting standards and dedication have quickly established the estate as a leading name in the region.
The vines are cultivated with meticulous care: short pruning, controlled ground cover, manual or mechanical harvesting depending on the plot, and limited yields. The grapes are sorted, vinified varietal by varietal, and then aged for 12 to 18 months, depending on the cuvée, in concrete tanks, large oak casks, or barrels. Extractions are gentle, and fermentations are conducted at controlled temperatures. Each wine is crafted to fully express the identity of its terroir, in a style that is at once powerful, velvety, and balanced. Harmony and precision are paramount.
The estate is certified "High Environmental Value – Level 3," recognizing the work carried out to promote biodiversity, the responsible management of plant protection products, fertilization, and water resources. Hedges, rest areas, and ecological corridors have been created to encourage local wildlife. Vine prunings are shredded and composted, then returned to the vines to naturally nourish the soil. This holistic approach respects the ecosystem and is part of a sustainable strategy.
