Pic Saint Loup: the elegant freshness of Languedoc reds
The Pic Saint Loup appellation, located north of Montpellier, is one of the most renowned in Languedoc. Nestled at the foot of the Cévennes mountains, between scrubland and mountains, it benefits from a cooler climate than the rest of the region, which gives its wines a unique character. Officially recognized as an AOC since 2016, it was previously one of the highest-quality wines of the Coteaux du Languedoc. Today, it embodies the elegance and complexity of the great wines of the South.
A high-altitude terroir with a strong identity
The Pic Saint Loup vineyards stretch across some twenty communes, at an altitude ranging from 150 to 500 meters. The soils are composed of hard limestone, marl, and scree, which promote excellent water retention and high-quality viticulture. The influence of the Cévennes mountains brings cool nights and temperature variations that are beneficial to the slow ripening of the grapes, particularly favorable to Syrah, the emblematic grape variety of the appellation.
The predominant red wines are made from Syrah (at least 50%), complemented by Grenache and Mourvèdre. They offer a complex aromatic profile: black fruit, violet, sweet spices, garrigue, and sometimes even smoky or mineral notes. They display lovely freshness, an elegant structure, and an aging potential of 5 to 15 years, depending on the vintage. The rosés, produced in smaller quantities, are delicate, fresh, and often paired with food.
Food and wine pairings with a refined, southern character
A red wine from Pic Saint Loup pairs perfectly with Mediterranean cuisine: grilled lamb, confit vegetables, tagine, duck breast, or even light game such as rabbit with mustard sauce. More structured wines complement dishes with rich sauces or aged cheeses beautifully. The rosés, delicate and expressive, are ideal as an aperitif, with summer salads, or with fish dishes seasoned with herbs de Provence.
