What wines go well with poultry?

Poultry holds a place of honor in French cuisine. Roast chicken, duck, guinea fowl, capon, or stuffed turkey: these white or dark meats lend themselves to a wide variety of preparations. Depending on the recipe, a white, light red, or even sparkling wine should be chosen to fully appreciate the subtlety of the flavors. Les Vins de Carole offers an expert selection of wines to complement all your poultry dishes.

White wines: finesse and elegance

For white poultry (chicken, turkey, capon), especially when roasted or served with a cream sauce, choose a Chardonnay from Burgundy such as a Meursault , a Montagny , or a Viré-Clessé . These full-bodied, lightly oaked white wines enhance rich dishes with refined elegance.

A Chenin Blanc from Vouvray or a Sauvignon Blanc from Sancerre would be perfect with grilled or cold poultry. For a more exotic touch, a Viognier will bring aromas of apricot and white flowers.

Light red wines: perfect for roast or braised poultry

A Pinot Noir from Burgundy, a Gamay from Beaujolais, or a light Côtes-du-Rhône pairs beautifully with duck with figs, guinea fowl with thyme, or roast free-range chicken. These supple, low-tannin red wines complement the delicate flavors of the poultry without overpowering its aromas.

Chinon or Saumur-Champigny , made from Cabernet Franc, are also very well suited to poultry dishes in red wine sauce or with mild spices.

Rosé and sparkling wines: modernity and lightness

A rosé from Provence or a Tavel is ideal for cold poultry, composed salads, or summer buffets. They bring freshness and fruitiness to light or marinated dishes.

A Brut Champagne or a Crémant de Bourgogne can also brilliantly complement stuffed or festive poultry. Their fine bubbles and freshness balance rich or spicy dishes.

Service tips

White wines are served between 10 and 12°C, light reds around 14–16°C, rosés at 10°C, and sparkling wines between 6 and 8°C. Don't hesitate to decant young wines to release their aromas, and to choose a wine that suits the cooking method (roasted, grilled, stuffed, in a sauce).
