What wines go well with fish?

Seafood cuisine is synonymous with finesse and lightness, and the wines that accompany it should reflect this delicacy. To enhance a fish dish, whether grilled, poached, in a sauce, or raw, it is essential to choose a wine that respects the texture and aromas of the food. White wines: the preferred pairing

Dry white wines are the classic partners for fish. Their natural acidity and freshness balance the richness of the fish without masking its flavors. A Sancerre or a Pouilly-Fumé from the Loire Valley, with their mineral and lemony notes, are a perfect accompaniment to a fillet of sea bass or fish cooked in parchment paper.

Chablis , made from 100% Chardonnay, is ideal for white-fleshed fish such as sole or turbot, especially when served with butter or cream sauces. Picpoul de Pinet or Vermentino are also very pleasant with grilled fish, particularly those served in summer.

Light reds and rosés for subtle pairings

Contrary to popular belief, some light red wines can pair well with fish, especially grilled or in tomato sauce. A Pinot Noir from Alsace or Burgundy, with its low tannins and delicate character, complements dishes like seared tuna or a light bouillabaisse. Gamay from Beaujolais is also a good choice.

Rosé wines offer a welcome fruity freshness that pairs beautifully with grilled or marinated fish, especially rosés from Provence, Tavel, or Languedoc. Their supple and aromatic profile makes them an excellent choice for Mediterranean cuisine.

Sparkling wines: refinement and vivacity

A Brut Champagne or a Crémant de Loire reveals its full potential with ceviche, sushi, or smoked fish. The fine effervescence and acidity cut through the richness of the fish and subtly enhance its briny aromas. They are also perfect as an aperitif if you serve fish rillettes or taramasalata.

Service tips

White wines should be served between 8 and 10°C, light reds around 14°C, rosés at 10°C, and sparkling wines between 6 and 8°C. Remember to choose the wine that best suits the fish: a crisp white for raw fish, a richer wine for fish in sauce, and a light red for grilled or spicy dishes.
