Great red wines meant to age for 5 to 10 years are distinguished by their density, concentration, and the quality of their tannins. They evolve towards complex tertiary aromas: leather, undergrowth, truffle, spices, tobacco… A few must-haves:
They pair well with dishes with character: game, stews, aged cheeses, or even dark chocolate for the more adventurous.
White wines suitable for aging 5 to 10 years often come from cool terroirs or grape varieties with high aging potential such as Chenin , Riesling or Savagnin . They develop complex aromas of dried fruit, beeswax, sweet spices and pronounced minerality.
These white wines pair wonderfully with fine fish, poultry in cream sauce, foie gras, and mature cheeses (Comté, Parmesan, etc.).
