Wines meant to be enjoyed between 10 and 15 years of age are exceptional vintages. They reach their peak of expression after a decade of patient cellaring, revealing their complexity, depth, and remarkable evolution. At Les Vins de Carole, we offer a carefully curated selection of fine red, white, and sparkling wines, all capable of slowly and beautifully improving over this period.

Great red wines for aging: nobility and power

Originating from prestigious terroirs, red wines intended for aging 10 to 15 years are often carefully crafted, aged for extended periods, and possess a robust tannic structure. At maturity, they offer profound tertiary aromas: leather, truffle, spices, and dried fruit. Essential examples:

  • Classified Growths of Bordeaux (Pauillac, Saint-Estèphe…)
  • Châteauneuf-du-Pape , Hermitage , Côte-Rôtie
  • Barolo , Brunello di Montalcino , Ribera del Duero

These wines pair well with robust dishes: game in sauce, stew, roast meats, mature cheeses.

Great white wines for aging: finesse and tension

Some white wines possess an acidic structure and aging process that allows them to develop beautifully over 10 to 15 years. They then develop notes of dried fruit, beeswax, honey, and sweet spices. Recommended:

  • Chablis Grand Cru , Meursault , Puligny-Montrachet
  • Vouvray moelleux, Riesling Grand Cru, Vin Jaune

Champagnes and sweet wines: at their peak of maturity

A vintage Champagne aged for 10 to 15 years gains in aromatic richness: brioche, dried fruit, and a chalky tension. Ideal for exceptional meals. Sweet wines (Sauternes, SGN, Tokaji) offer a smooth sweetness and captivating complexity.

Storage instructions

Store in a cool cellar (10-13°C), away from light and temperature fluctuations. Serve reds after prolonged decanting (16-18°C), and whites between 12-14°C. These wines deserve special attention and a unique tasting experience.
