White wines: freshness and balance in the face of spices

For Thai, Indian, or Vietnamese dishes, which are often spicy or sweet and savory, opt for lightly aromatic white wines with good acidity. An Alsatian Riesling or a Gewurztraminer pairs wonderfully with a curry or pad thai thanks to their floral and fruity notes. A Viognier , with its aromas of peach and apricot, is a perfect match for fragrant Asian cuisine.

Japanese cuisine, with its more subtle character, pairs well with dry white wines such as Sancerre or Chablis , whose minerality highlights the delicate flavors of sashimi and maki. For Mediterranean dishes, a Greek Assyrtiko or a Corsican Vermentino will perfectly complement grilled fish or marinated vegetables.
