Located in Villié-Morgon, in the heart of the Beaujolais wine region, Domaine Jean Foillard cultivates the most emblematic terroirs of the Morgon cru with exceptional precision. Its vineyards extend over approximately 22 hectares, the jewels of which are situated on the renowned Côte du Py, composed of decomposed schist, and in the Corcelette sector, known for its lighter, sandy-granitic soils. The estate also owns a few parcels in Fleurie, celebrated for its floral and ethereal expressions of Gamay. These terroirs benefit from optimal exposure and a continental climate, characterized by significant temperature variations, which allows for slow and gradual ripening. Each parcel is vinified separately to preserve the authenticity of these living soils. The Côte du Py yields structured, profound wines built for aging, while Corcelette seduces with its lusciousness and delicate texture. Fleurie, for its part, reveals a more floral, refined, and approachable style.
Gamay
Jean Foillard took over the family estate in 1981, having been introduced to the craft at a very young age. He is one of the pioneers of the natural wine movement in Beaujolais, alongside Marcel Lapierre, Jean-Paul Thévenet, and Guy Breton. These winemakers, influenced by Jules Chauvet, rejected intrusive winemaking practices, returning to traditional, peasant-style viticulture and winemaking without artifice. Early on, Jean Foillard adopted an approach based on respect for life: no herbicides, no chemical fertilizers, no industrial yeasts, and no added sulfur. His objective was clear: to express Gamay in its purest form, that of great terroirs. His exacting standards, combined with profound humility, have led him to recognition far beyond Beaujolais. Today, he is gradually handing over the reins to his son, Alex Foillard, who honed his skills in Australia and California before returning to the estate. Alex has already taken over some plots in his own name, and is gradually absorbing the house style while bringing his own sensibility, more open to the international.
The vines are cultivated organically, without certification, but with meticulous care in every step. Pruning is kept short to limit yields, ground cover is carefully managed, and treatments are limited to sulfur and copper in very small doses. The harvest is done by hand, with rigorous sorting. The whole grapes are placed in concrete or stainless steel vats, without destemming. Semi-carbonic maceration lasts two to three weeks at low temperatures, without the addition of yeasts, enzymes, or sulfur. Aging takes place in large oak casks or old barrels for six to nine months, with minimal intervention. No wine is filtered or fined, and sulfur is used in homeopathic doses, or even absent in some vintages. Each batch is monitored under a microscope to guarantee the wine's stability and purity, without any deviation.
The wines of Domaine Jean Foillard are immediately recognizable for their purity, aromatic intensity, and velvety texture. Morgon Côte du Py is a wine with excellent aging potential, offering notes of black cherry, plum, warm stone, and graphite, evolving with time towards truffle and gamey aromas. Corcelette, more approachable in its youth, offers aromas of small red fruits and peony, along with a juicy and taut palate. Fleurie exudes floral scents of violet and dried rose, with an ethereal and luscious palate. The Éponym cuvée, from a slightly higher slope, emphasizes tension and verticality. Each wine expresses a Gamay character free of heaviness, while retaining remarkable depth. Contrary to the sometimes simplistic image of Beaujolais, Foillard's wines can improve over ten to fifteen years, gaining complexity without losing their brilliance.
The estate is highly praised in leading guides such as La Revue du Vin de France (Guide Vert), Bettane & Desseauve, and also by the Anglo-Saxon press (Wine Advocate, Decanter, Vinous, etc.). Its wines are distributed in the finest wine shops in France and featured on the wine lists of Michelin-starred restaurants worldwide. Jean Foillard is regularly cited as an absolute authority on Gamay, as well as a leading figure in controlled, pure, and precise natural winemaking. His wines are often used as benchmarks by sommeliers and specialist wine merchants. The estate also serves as an example for the new generation of winemakers who strive to combine integrity, technical excellence, and respect for the terroir.
