Located in the hills above Gassin, in the heart of the golden triangle of Saint-Tropez, Ramatuelle, and La Croix-Valmer, Château Minuty is part of the prestigious Côtes de Provence AOP appellation. Its vineyards stretch across south and southeast-facing slopes, benefiting from the refreshing influence of the Mediterranean and the protection of the Mistral wind. The clay-granite soils combine depth, natural drainage, and solar reflection, promoting the slow and harmonious ripening of the grapes. The terroir, ranked among the highest quality in the region, imparts a unique character to the wines: floral, saline, and vibrant.
The star grape varieties of Provence take center stage here. Grenache, the dominant grape for rosés, brings roundness and fruitiness. Cinsault lends finesse, freshness, and floral elegance. Syrah enhances structure and color. Tibouren, an indigenous grape variety, adds a touch of Mediterranean authenticity. For whites, Rolle (Vermentino) predominates, sometimes complemented by Sémillon or Ugni Blanc, depending on the vintage.
In 1936, Gabriel Farnet, former owner of Château de Châteauneuf, acquired the Minuty estate. By 1955, it was among the first 23 estates to be awarded Cru Classé status in the Côtes de Provence. The family tradition has continued for three generations. Jean-Etienne and François Matton, grandsons of the founder, have taken over with a vision that combines excellence, respect for the terroir, and modernity. Their ambition: to produce refined wines, typical of Provence, that highlight the freshness and purity of the fruit.
Château Minuty controls every stage of production. The harvest takes place at night to preserve the aromatic integrity of the grapes. The berries are quickly transported to the winery and then sorted by hand. Pressing is direct and gentle, with great care taken to protect against oxygen. Fermentation occurs in temperature-controlled stainless steel tanks, sometimes followed by aging on fine lees, depending on the cuvée. The premium cuvées, such as "Rose et Or" or "281," benefit from partial aging in oak barrels or egg-shaped tanks to add roundness and a more complex expression.

The estate is committed to responsible viticulture. The use of pesticides is kept to an absolute minimum, with mating disruption techniques employed to avoid insecticides. Soil cultivation is mechanical, excluding herbicides. Irrigation is very limited, and partial natural ground cover is maintained to protect the soil. The winery is designed for optimal energy efficiency, minimizing consumption and utilizing gravity for juice transfer. Minuty thus integrates its production into a sustainable approach, respectful of the environment and consumers.
