The estate covers 45 hectares spread across four distinct terroirs in Languedoc and Roussillon: limestone and sandstone in Brugairolles (the main terroir), limestone in La Livinière, schist at Col de la Dona, and gneiss in Latour-de-France. Each site, facing south to southwest, offers a unique expression of the grape varieties thanks to the diverse soils (limestone, sandstone, slate, granite).

Philosophy and History

Originally a coaching inn in 1749, the estate became a modern winery in 2003 when it was acquired by Tim Ford and Anthony Record, with Vincent Chansault as winemaker. Drawing on the Loire Valley and South African winemaking traditions, Vincent introduced Chenin Blanc and Cabernet Franc. From the outset, the estate chose the IGP Pays d'Oc label for its winemaking freedom, while cultivating quality and the expression of the terroir. Certified organic since 2011 and biodynamic since 2017, the approach is respectful: "nothing added, nothing removed," a pursuit of the purity of the grape.

Production specifics

The grapes are harvested by hand, in 20 kg crates, plot by plot. Vinification takes place in small vats ranging from 15 to 100 hl, using various fermentation methods: concrete eggs, amphorae, large casks, and barrels (demi-muids and large barrels). The estate practices strict sulfur control, uses temperature-controlled vats, and regularly incorporates technical innovations such as cooling and the continuous development of winemaking equipment. Yields are controlled to maximize concentration and intensity, particularly for the premium cuvées.

Several wines have been praised by the specialist press: Villa Mon Rêve (AOP Minervois-La Livinière) has received rave reviews and regular accolades from Decanter, and Chemin de Moscou has earned high marks from Decanter for its structure and precision. The estate is also featured in numerous guides and has won awards in Europe.
